Make cozy chicken bacon gnocchi soup for a ‘deletable’ winter meal

There is nothing better than a comforting and rich soup during the cold winter months, and one chef has shared her “straightforward” recipe for chicken bacon gnocchi soup. 

Heaty gnocchi mixed with smoky bacon and tender rotisserie chicken are such well-loved flavors, and this simple soup can be cooked up in 30 minutes.

Natasha Bull, a cookbook author and recipe developer, confessed that this “no-brainer” recipe starts by cooking the bacon and then sauteing both the garlic and onions in the bacon fat which “builds a lot of delicious flavor.” 

On her blog Salt and Lavender, Natasha wrote: “This creamy chicken bacon gnocchi soup is comfort in a bowl! Everyday ingredients come together quickly for this simple and delectable meal.”

This recipe serves six people and the chef recommends pairing it with garlic bread or a side salad.

How to make chicken bacon gnocchi soup 

Ingredients 

  • Six strips of bacon
  • Half a medium onion
  • Four cups of chicken broth
  • Two garlic cloves
  • Two cups of cooked rotisserie chicken
  • Two cups of baby spinach 
  • One pound of potato gnocchi
  • One cup of heavy or whipping cream 
  • One teaspoon of Italian seasoning
  • Salt and pepper

Method

To begin, prepare the ingredients. Cut the bacon into small pieces, chopped up the half onion, and mince the garlic cloves

Place the bacon in a soup pot and cook on medium to high heat for around 10 minutes or until the bacon is crispy. 

Once cooked, place the bacon on a kitchen paper towel-lined plate which can absorb the access grease. 

Save at least two tablespoons of the bacon grease to cook the rest of the vegetables. Add your half onion to the same pot and saute for around four to five minutes or until the onion has softened. 

Stir in the garlic and let it cook for around 30 seconds. 

Pour in the chicken broth and cream, then add in the gnocchi and Italian seasoning. Add the cooked bacon to the pot, and stir. 

Thoroughly stir the soup to make sure the ingredients are fully incorporated. Scrap any of the brown bits from the bottom of the pot with your mixing spoon or ladle. 

Bring the soup to a boil by cooking on high heat. Once it is boiling, reduce the heat so that the mixture is gently simmering. 

Cover with a pot with the lid ajar and cook for 15 minutes, making sure to check and stir the mixture occasionally to make sure the gnocchi does not stick to the bottom of the pot. 

Once the soup has thickened, add in your cooked chicken and spinach. Let it continue to cook for a few minutes to fully incorporate the ingredients, and then your delicious gnocchi soup is ready to serve. 

Serve with as much salt and pepper as needed as well as a few bacon pieces as a garnish.
