Jamie Oliver’s ‘delicious’ spicy chicken traybake recipe is a perfect warming winter meal

There is nothing better than something simple yet packed full of flavor, and Jamie Oliver has come up with a one-tray dinner to help you cook something incredible that is best enjoyed on a cozy winter night.

Chicken bakes are a very easy dinner to make, but Jamie Oliver has shared his “Mediterranean-style” chicken recipe to help warm you up this winter.

Now that November is here, the weather is getting colder and winter is quickly approaching. Most people are looking for rich and hearty comfort food that can be prepared on a cold winter evening. 

Luckily, British cook Jamie Oliver has come up with a simple recipe that only takes five minutes to prepare and then you can stick it in the oven to roast. 

This harissa chicken traybake contains harissa, a North African chilli paste, which can easily be found in most supermarkets and then you simply need chicken, onions, pepper and some seasoning to make this tasty dish. 

In a video online, Jamie explained: “We’re going to make the most delicious harissa chicken traybake. It’s a beautiful, colorful Mediterranean-style meal  full of flavors.”

How to make Jamie Oliver’s easy spicy chicken traybake 

Ingredients

  • One whole chicken 
  • Four mixed color pepper
  • Two red onions
  • Four teaspoons of rose harissa
  • Four sprigs of fresh mint 
  • Red wine vinegar (optional) 
  • Pepper and salt (optional) 
  • Olive oil 

Kitchen equipment: 

  • 30cm x 40cm roasting tin 
  • Large sharp knife

Instructions 

1. To begin, heat your oven at 180C/Gas Four (or 350F). 

2. Prepare your vegetables. Deseed your peppers and roughly chop them into chunks. Next, peel your onions and break apart, Place them all in your roasting tin. Add a few glugs of olive oil and red wine vinegar to the vegetables and mix them well together. 

3. Next, use a large sharp knife to cut down the back of the chicken and then open it out flat. Use the knife to score the legs. 

4. Rub your harissa all over the chicken and season with salt, pepper, and mint leaves. Make sure all the seasoning is mixed well to get into the chicken. 

5. Place the chicken on top of the vegetables in the roasting tin with the chicken skin side up. 

6. Roast for 50 minutes or until the chicken looks crispy and golden. Take out the oven, remove the mint leaves and your simple yet delicious chicken bake is ready to serve.
