Instructions

According to Kelly, the secret to making the best sweet potato mash is by slowly roasting them in the oven. She said: “The key is actually roasting your sweet potato instead of simmering them in water.

“I roast them in a cold oven because if they come up to temp with a cold oven, then they’re actually a lot sweeter. The sugars carmelize and it brings out the sweetness in the yams. “

To begin, line a tray with baking parchment and stab your sweet potatoes all over with a fork. This is done to allow steam to escape while they are cooking so they do not explore in the oven.

Bake the sweet potatoes in the oven at 425F for 45 to 60 minutes. Make sure you do not preheat your oven, as the slower the sweet potatoes the sweeter they will come out.

Once they are baked, slice the potatoes open with a knife and remove all the flesh inside. Make sure all the skin is gone and then place your sweet potatoes in a blender.

While it is blending, add your coconut milk or cream and then season with salt.

Blend until smooth and your delicious next-level sweet potato mash is now ready to serve.
