Are you fed up with your beef turning out dry in the oven? Here's a simple recipe that promises "extremely moist, tender, juicy" meat that will "melt in your mouth".

Cooking a big piece of beef can be a long process and takes a lot of effort. That's why using a slow cooker is the best way to cook beef. It cuts down the time it takes to prepare the dish and you can get everything ready for slow cooking the night before.

A slow cooker, also known as a crock pot, is an electric kitchen gadget that cooks food at a lower temperature than boiling point, making it different from baking, boiling, and frying.

Slow cooker experts from Swan have shared an "amazing" recipe for a "perfect melt-in-the-mouth piece of beef" that will "blow your mind". It uses just a few ingredients and has a lovely seasoning. This roast beef recipe takes about 30 minutes to prepare and around seven hours to cook.

Roast beef recipe

Ingredients

  • 1 kg rolled beef brisket
  • Two tablespoons olive oil
  • Two tablespoons cornflour
  • Some roughly chopped carrots
  • Two chopped celery sticks
  • One medium-sized sliced onion
  • Two minced garlic cloves
  • Two tablespoons of mustard
  • 400ml red wine
  • 350ml beef stock
  • Two tablespoons of tomato sauce
  • Sugar
  • Salt
  • Black Pepper

Method

  1. First, season the beef brisket with a pinch of salt and black pepper. Dust the beef with one to two tablespoons of cornflour.
  2. Heat two tablespoons of olive oil in a large frying pan over medium heat. Once the oil is hot, add the beef and stir-fry it well.
  3. Add the chopped carrot, sliced onion, chopped celery, and mushroom to the slow cooker and let it cook on low heat.
  4. Place the beef brisket on top of the vegetables in the slow cooker. Add garlic, tomato sauce, a pinch of sugar, mustard, beef stock, and wine. Cover with the lid and let it cook for at least seven hours.
  5. After seven hours, remove the beef from the slow cooker and place it on a baking tray to cool down. Roast the beef in the oven at 200C for at least 20 minutes.
  6. While the beef is roasting, spoon the liquid from the slow cooker into a shallow pan. Reduce this liquid to create a rich, thick gravy.
  7. Once the beef brisket is roasted, slice it and serve with the gravy, roasted potatoes, and some vegetables.
