Thanksgiving leftovers become a bore after a few days. However, this easy hack can spruce up your mashed potatoes to make an entirely different meal.

Instead of eating bland potato mush for the third day in a row, you can turn the mash into a fried pancake in just three easy steps that will only take 15 minutes. Akin to a Hanukkah latke or a classic hash brown, the fried potato pancake is crispy on the outside and remains fluffy on the inside. It can be eaten plan or with a dipping sauce like applesauce or sour cream. 

“Whenever we had leftover mashed potatoes, my mom would always fry them up with lots of butter and it’s still one of my favorite things to make,” a TikTok chef shared.

Ingredients

  • 2 cups cold mashed potatoes

  • 2 eggs, lightly beaten

  • 1 tablespoon all-purpose flour, or more if needed

  • ⅛ teaspoon garlic powder

  • 1 tablespoon vegetable oil, plus more as needed or 1 tbsp of butter per cup of mashed potato 

  • 1 tablespoon chopped fresh chives

  • Applesauce or sour cream for dipping, optional

Instructions

1. Place potatoes, eggs, flour, and garlic powder in a bowl and mix well. If your mashed potatoes are on the wet side, add 1 tablespoon of flour at a time until you reach a better consistency for shaping. Shape potato mixture into one large pancake on a lightly oiled plate.

2. Heat oil or butter in a nonstick skillet over medium heat. Place your potato pancake into the skillet, pressing with a spatula to flatten evenly. Cover and cook until bottom is crispy, which should take about 8 to 10 minutes.

3. To cook the other side, slide pancake onto a serving plate. Cover with another plate and flip. Slide pancake back into the skillet and cook until crispy, which should take about about 3 to 5 minutes. Slice into wedges and serve hot, garnished with fresh chives and optional dipping sauce of choice.
