When you think of pumpkins, you may think of spooky Halloween decorations or a sweet pumpkin pie.

But one cook has explained that pumpkins are also best used in savoury dinners as well. 

October is a time of year when many people are looking for something rich to warm themselves up during the cold nights, and this creamy pumpkin pasta cooked in brown butter is perfect for a cosy autumn dinner. 

This fun autumn dinner takes less than 30 minutes to prepare and is incredibly easy to make in only a few simple steps.

How to make pumpkin pasta 

Ingredients 

  • 16 ounces of penne pasta 
  • Half a cup of reserved pasta water
  • One cup of pumpkin puree
  • One cup of heavy cream
  • Three tablespoons of tomato paste 
  • Two tablespoons of unsalted butter
  • One tablespoon of olive oil
  • One tablespoon of minced garlic
  • One tablespoon of paprika
  • One tablespoon of red pepper flakes
  • Half a teaspoon of onion powder
  • Quarter teaspoon of nutmeg
  • Half a cup of grated parmesan cheese
  • Four chopped sage leaves 
  • Salt and pepper to taste
