Make ‘perfect’ poached eggs without vinegar in two minutes using a ‘secret ingredient’

Poaching eggs at home could not be easier with this simple two-minute cooking method which has a secret ingredient.

Poached eggs topped on buttery toast is one of is not only a delicious breakfast but is packed full of essential nutrients which is why it is a quick, easy and popular way to start the day.

However, it can be incredibly frustrating trying to poach an egg just right as it can be very easy for the egg to break apart while cooking in the pot.

There are many cooking techniques to try and prevent this recipe disaster, such as adding a little bit of vinegar to the pot or even swirling the hot water in the pot before adding the eggs to try and help it keep shape while cooking.

Professional chef Evan Martin has claimed that all you need to make “perfect poached eggs” is one simple ingredient which you likely already have in your kitchen, a lemon.

In a video online, Evan said: “Let me show you how to poach the perfect egg without any vinegar…. Our secret ingredient here is a lemon. You can substitute a lemon instead of vinegar for your poaching solution.”

Both vinegar and lemon are acidic, which means adding a few drops of either into boiling water will prevent the egg whites from spreading out, meaning the egg is more likely to keep its shape while cooking.

In order to try out this clever technique, simply crack your eggs into a small bowl, which will make it easier to remove any rogue eggshells.

Then take your lemon and cut it in half. Evan said: “Cut this in half, strain out that juice. You’re going to need about a tablespoon of that lemon juice.

Bring a pot of water to a boil on your stove, and then add one tablespoon of lemon juice and then add in your eggs.

Swirl the water around in the pot and then gently dip your small bowl into the pot to add the egg and make it less likely the egg will break up

Evan explained: “Create a vortex before dropping in your eggs, this will help the coagulation process.”

Cook for around two minutes or until the egg appears firm and not too soft. If it the egg feels too wispy, then your egg is likely undercooked and will need a little bit more time to harden.

Once ready, Evan said: “Use a slotted spoon and a paper towel to dry off your eggs.”

When your eggs are on the paper towel, season them and make up your toast or whatever side you wish to go with your eggy breakfast.

Evan said: “Don’t forget to season your eggs with salt and pepper as soon as they come out. That’s how you make the perfect poached eggs without vinegar.”
