Gordon Ramsay's griddled chicken with chickpeas recipe is the perfect comfort meal for the holiday season.

The healthy and easy-to-make recipe only requires a handful of ingredients, many of which you probably already have at home. He bills it as a great unique recipe to spice up your Christmas dinner table. Plus, his daughter Tilly approves of it, too.

However, there are loads of other options like Ramsay's unique bolognese or shepherds pie if you want to try out another warm, homecooked meal this season.

Ingredients

  • 4 chicken thighs

  • Mustard 1 teaspoon

  • Olive oil 2 teaspoons

  • 1 lemon

  • Cooked chickpeas 150 g

  • Piquillo peppers 150 g

  • Kaffir berries 100 g

  • Salt

  • Pepper

First, warm up the griddle while you prepare your chicken.

Ramsay says to use thigh meat – the brown meat – so it doesn’t go dry. Season it with olive oil, salt and pepper. Make sure to flip the chicken to coat both sides.

Then place the chicken skin side down on the griddle. He says this is the best way to get your chicken crispy without drying it.

"Skin side down keeps it moist," he says in the video.

He also says the boneless chicken cooks fast – approximately three minutes on each side – so set your timers, and then you can get started on the chickpea mixture.

Put a can of chickpeas, one teaspoon mustard, a teaspoon of olive oil, the juice of one lemon, and salt and pepper to taste in bowl.

Then chop your roasted and smoked spanish red peppers using the the three fingers method before adding it to the bowl. Also slice your keffir berries and then add it to the bowl.

Using your hands, mix is all together before adding your chicken. Then it is ready to be served.
