Coffee cake recipe with a ‘cozy’ fall twist is ‘absolutely delicious’ and easy to make

Coffee cake is a beloved dessert that pairs wonderfully with a hot beverage at this time of year, this recipe shows how to make this classic dessert a delightful fall treat.

There is nothing better than moist cake filled with sweet icing and topped with walnuts for some crunch, but this dessert now has a fall twist to it.

Now that the weather is getting colder, many people will be putting on their favorite sweatshirts, getting their favorite hot beverage, and spending most nights cuddled up warm indoors.

There are many fun fall recipes to make at this time of year such as cinnamon bread, apple crumble or even pumpkin pancakes, but this apple cider coffee cake is the perfect pairing for a cozy night indoors and is an incredibly easy recipe to make at home.

Valerie Brunmeier, a cook, recipe developer and founder of Valerie’s Kitchen, has said she came up with this delicious recipe as an easy way to use up any apples or cider you may have your at this time of year.

She wrote: “This cozy Apple Cider Coffee Cake is just the thing for a lazy Sunday morning or a holiday brunch buffet. In addition to being absolutely delicious, this easy cake will fill your house with the aroma of apples, cinnamon, and nutmeg as it bakes.”

How to make Apple Cider Coffee Cake

Ingredients

For the cake:

  • One and a half cups of all-purpose flour
  • One cup of peeled and chopped apples
  • Two tablespoons of baking powder
  • Half a cup of granulated sugar
  • Half a cup of plain Greek yogurt
  • Half a cup of vegetable oil
  • Half a cup of apple cider
  • One-third cup of light brown sugar
  • One tablespoon of cinnamon
  • One tablespoon of vanilla extract
  • Half a tablespoon of salt
  • Half a tablespoon of nutmeg
  • Quarter teaspoon of allspice
  • Two large eggs

For the crumb topping:

  • Half a cup of all-purpose flour
  • Half a cup of light brown sugar
  • Quarter cup of granulated sugar
  • Give tablespoons of cold butter
  • One teaspoon of cinnamon
  • Pinch of salt

For the apple cider glaze:

  • Half a cup of confectioner’s sugar
  • One tablespoon of apple cider
  • Walnuts (optional)

Kitchen equipment:

  • Nine-inch baking dish
  • Medium mixing bowl
  • Large mixing bowl

Instructions

To make the cake:

To begin, preheat the oven to 350F (180C). Grease your baking tray with butter or a non-stick cooking spray.

Next, take your medium mixing bow and combine the flour, baking powder, cinnamon, salt, nutmeg, and allspice and then set it aside.

In the large mixing bowl, combine all the granulated sugar, light brown sugar, Greek yoghurt, vegetable oil, eggs, apple cider and vanilla extract. Mix until well combined.

Add the dry ingredients from the medium mixing bowl to the large mixing bowl and stir well, Gently fold in the chopped-up apples once all the ingredients are incorporated.

Transfer all of the cake batter into your baking tray.

To make the crumb topping:

Place the flour, brown sugar, granulated sugar, cinnamon, salt, and butter into a mixing bowl and fork to work the mixture together until the butter chunks have gotten smaller and are more incorporated. Once the butter is pea-sized, use your hands to work the mixture.

According to Valerie, the mixture may seem dry at first but your hands will soon soften the butter and you work it. She wrote: “When the mixture begins to hold together when you squeeze a handful, it is ready.”

Sprinkle your crumb topping over your cake and your cake is ready to bake. Place in the oven for around 35 to 45 minutes, or until the crumb topping appears a light golden brown.

Use a toothpick and insert it into the middle of the cake to check if is ready, and if it comes out clean, your cake is ready to take out the oven. If it comes out wet with cake batter, your cake needs a few more minutes.

To make the apple cider glaze:

Combine the sugar and apple cider and add more cider if needed until you have a thick glaze. Once your cake is done, take it out the oven and leave to cool down.

When the cake is cool, pour the glaze over the crumble. Your delicious and apple cider coffee cake is now ready to serve.
