Chipotle’s founder and former CEO, Steve Ells, is reportedly making a comeback in the restaurant industry with a new venture called Kernel.

Scheduled to launch in Manhattan in early 2024, Kernel is distinct for its focus on providing vegetarian options within a fast-casual setting, all while using robots—a departure from traditional staffing models.

Kernel's menu is set to include meat-free burgers, faux chicken sandwiches, salads, acai bowls, and sides like cucumbers with wild rice, according to Restaurant Technology News.

The pricing is anticipated to be in line with Chipotle's, and the company has committed to offering competitive pay and benefits for its human staff compared to other chains.

The introduction of robots into the kitchen is a strategic move by Ells, driven by the belief this system design will improve food safety—a critical consideration in light of Chipotle's history of foodborne illness reports.

Additionally, the automation allows for smaller employee numbers, with each Kernel location expected to employ only three workers.

However, this approach may not resonate with all customers, as a 2022 study by PYMNTS found a majority of diners believe restaurants are becoming increasingly understaffed.

The research also showed a significant portion feels the dining experience is becoming less personal.

Industry insiders insisted the human component remains pivotal in building customer loyalty.

Kernel is Ells' first venture since stepping down as Chipotle's leader in 2020 and the company reportedly has ambitious plans to open at least 15 locations in New York City over the next two years, with the initial location confirmed for downtown Manhattan.

While the use of robots in the food and beverage industry is not groundbreaking, Kernel's entry into the market adds another dimension to this ongoing trend.

Ells has personally invested $10 million into Kernel and secured an additional $36 million from investors.

Kernel's operations will heavily rely on automation, with robots managing tasks such as warming buns, moving pans, and using conveyor belts to transport dishes through the kitchen.

Human staff will add the finishing touches to dishes before packaging them for customer pickup.

Ells' strategic decision to focus on vegetarian offerings aligns with his commitment to environmental sustainability, inspired by Bill Gates' book How to Avoid a Climate Disaster.
