Apple cider chicken recipe is the ultimate cozy fall dinner and it is 'so simple' to make

October is a time for hearty yet delicious meals and this tender chicken meal can be prepared in around 20 minutes.

Fall has now arrived and the weather is now beginning to get much colder, which means most people will be looking for some easy comfort dinners to make in order to keep warm and cozy. 

Nobody wants to spend lots of time cooking something up after a long day, which means this cider braised chicken with caramelized onions is the perfect recipe to quickly make from scratch. 

This chicken is made in one pot and only takes around 20 minutes to prepare before it slowly tenderizes in the oven for around 30 minutes. 

This saucy braised chicken recipe was developed by chef Tieghan Gerard, a cookbook writer who has explained that this “cozy fall meal” is very easy to put together as well as being delicious. 

Tieghan has posted this flavorful recipe on both her website and on a video on social media, and said: “My cider-braised chicken with caramelized onions is one of my favorite dinners right now, it's so simple and perfect for fall.”

Cider braised chicken with caramelized onions recipe

Ingredients 

  • Two pounds of boneless chicken thighs 

  • Four thinly sliced onions

  • Four chopped garlic cloves

  • Two cups of sliced mushrooms

  • Two cups of apple cider 

  • One cup of chicken broth (or white wine)

  • Three tablespoons of all-purpose flour 

  • Two tablespoons of thyme 

  • One tablespoon of sage

  • One tablespoon of salted butter 

  • Salt and pepper to taste 

Side dish recommendation: 

  • Warm buttery bread

  • Wild rice

Kitchen equipment:

  • Large oven-safe skillet

Instructions 

To begin, preheat your oven to 400° F. Prepare your chicken by rubbing it with flour to coat it and then season it with both salt and pepper. 

Take your skillet and place it on high heat. Sear your chicken on one side, then remove it and place it onto a plate. 

Add butter and onions to the skillet and cook for around five minutes until softened. Season with salt and pepper and add half the apple cider. Cook for another five to eight minutes until the cider has evaporated. 

Next, add your garlic, mushrooms, and herbs (thyme and sage) to the pot, and add the chicken back to the pot, Add the broth (or wine) and the rest of your apple cider. 

It is now time to cook the chicken in the oven for around 30 minutes until the chicken is tender and falling apart, Make sure to keep an eye on the sauce and if it thickens too much then cover your pot. 

Take the dish out of the oven, and you can now serve your cosy one-pot chicken, Make sure to drizzle all the remaining sauce in the pot all over the chicken to make sure you get all the incredible flavors.
