The Almost Makes You Believe Again Pie recipe from ‘Waitress: The Musical’ is packed with ingredients not typically paired together to make for a delicious treat that will keep your holiday guests coming back for more.

This pie calls for using ingredients you may have completely overlooked that are tucked away in the back of your cupboard. Things that were purchased but not often used, such as poppy seeds or molasses to name a few.

Juicy pears and tart cranberries thrown in the mix as well as a hint of brandy to spice things up are in the blend. Ginger ties everything together, making the ingredients harmonize in a way you wouldn’t have expected.

The pie recipe is good for making one nine-and-a-half-inch or 10-and-a-half-inch deep dish pie. You will need dough for a classic single-crust pie along with the following ingredients.

Streusel ingredients

1 cup unbleached all-purpose flour

2/3 cup packed dark brown sugar

1 tablespoon poppy seeds

1 teaspoon ground ginger

1/2 teaspoon ground cinnamon

1/4 teaspoon ground cloves

1/4 teaspoon kosher salt

5 tablespoons unsalted butter, melted

1 tablespoon molasses

Filling ingredients

6 pears (3 pounds), unpeeled, quartered, cored, and cut into bite-size chunks

2 cups fresh or frozen cranberries (do not thaw if frozen)

1/2 cup granulated sugar

1/4 cup minute tapioca

1 tablespoon apple cider vinegar

1 tablespoon brandy

1 tablespoon finely grated lemon zest

1 teaspoon ground cinnamon

1/2 teaspoon kosher salt

1/2 teaspoon ground ginger

1 tablespoon cold unsalted butter, cut into very small cubes

Step 1: On a surface dusted with flour, stretch out the dough until it's several inches bigger than your pie pan, adding a sprinkle more flour if needed. Pop it into a nine-and-a-half or 10-and-a-half-inch deep-dish pie pan, making sure it fits snugly into all the corners. Make the edges of the dough look pretty by crimping them. Pop it in the fridge until you're ready to add the filling.

Step 2: Place a rack in the center of the oven and preheat the oven to 400°F. Put a rimmed baking sheet on the rack as it preheats.

Step 3, for the streusel: In a bowl, mix the flour, brown sugar, poppy seeds, ginger, cinnamon, cloves, and salt. In another bowl, mix the melted butter and molasses. Pour this over the dry ingredients and stir until it forms small clumps. Put it in the fridge until you need it.

Step 4, for the filling: Mix the pears, cranberries, sugar, tapioca, vinegar, brandy, lemon zest, cinnamon, salt, and ginger in a big bowl. Add the butter pieces to the mix and stir it a bit with a rubber spatula. Pour this yummy filling into your cold pie crust and sprinkle the streusel on top.

Step 5: Pop the pie onto the baking sheet and let it bake for 20 minutes. Then, lower the oven temperature to 375°F and continue baking until the filling is bubbling away and the crust is perfectly baked, which should take about 50 to 60 minutes more. Once done, move it to a wire rack to cool down.
